The liquid crystals light up when their respective temperatures are reached. Read the brightest number. If two numbers are equally bright, the temperature is in between.

Stir water to get even temperature. Put thermometer fully into water and keep it there for 15 seconds. Temperature must be read while thermometer is still under water.
